We will remember them

ANZAC Day is a very special day on the calendar - especially for me personally ever since I experienced the magic of a dawn service at Gallipoli four years ago. Breathtaking. So I thought I'd better mark the occasion this year and hunt down a recipe for the traditional ANZAC biscuit.

Hot tip - I like my ANZAC biscuits chewy and soft, so tend to undercook them for that caramely taste. YUM! Another variation that my Granny swears by (and we are treated to every family catch-up!) is a jumbo sized biscuit that she covers with a layer of jam (apricot's the best), then slathers with cream, and then tops with slices of banana. Then you cut it into slices, like a pizza I guess! Don't knock it til you try it!

I totally agree, love them a little under cooked so they are soft and gooey.

Hi Kate, Came over from Miss Kim's. You are just what I am looking for..... kitchen/cooking/food inspiration. I have become my mother and now complain about how much I don't like cooking/having to cook for my beautiful little family. That has to change. I have many more years of cooking for my boys so I need to change my attitude. Your blog is going to help... see... positive affirmations already! My Anzac recipe is exactly the same except for 1 tbs less of water. Mine needed more water so I have now officially adopted yours. A-M xx

Hello, I just joined the brown button and thought I would come show you some love too!
I love ANZAC cookies and made a batch too, it was a recipe almost exactly the same as yours. I added 1/3 of a cup of chopped pecans and it really added to them I think! Also, on half of them I drizzled some of our left over Easter chocolate over them and my GOODNESS, they were awesome!
I am loving your Grannies version though, will have to give that a try next year I reckon!
