I had Cat over for dinner the other night but had no idea what to cook. She's a bit of a vegetarian and I wanted something that felt 'light'.
I mixed together a few random ingredients and was stoked with the end result - yummy puff pastry tarts.
Basically, puff pastry sheets with a ricotta and egg mixutre with basil, tomato and bocconcini on top. Bit of rocket and spinach on top with parmesan and balsamic. Pinch of salt and pepper.
I experimented with caramelised onion on anothet batch.
Delish for lunch the next day as well. And super easy!
